Paul Le Noury

My journey grew through High School into a first-year apprenticeship at St Andrews Hospital, followed by Melbourne Catch Seafood and then four formative years with Stephanie Alexander in East Hawthorn, where I refined knife skills and service. With roles at Bouchon with Greg Brown, plus roles at the Lyall Hotel, Scotchman’s Hill Winery, and running cooking classes at Queen Victoria Market.

I have been exposed to all styles and cuisines and travelled the world experiencing them for myself. I invite you to join me as we create, learn, and grow together.
