Pickled vegetables

Ingredients (Base Liquid)

  • 1 x cup white wine vinegar 
  • 1 x cup water 
  • 1 x cup sugar (brown or for Asian pickles – palm sugar)
  • 1 x teas sea salt

Method:

  • Bring to the boil in saucepan
  • Add botanicals like star anise, cinnamon sticks, cloves, peppercorns, coriander seeds.
  • Add herbs like bay leaf, garlic, chilli, rosemary, ginger, turmeric, lemongrass and more
  • Slice red onion, capsicum, carrots, fennel, cauliflower florets, zucchini or daikon.

Uses:

  • as a dipping sauce or brush over grilled meats drizzle over grilled or fried king prawns or fish fillets
  • salad dressing or noodle salad
  • marinade for chicken
