Ingredients (Base Liquid)
- 1 x cup white wine vinegar
- 1 x cup water
- 1 x cup sugar (brown or for Asian pickles – palm sugar)
- 1 x teas sea salt
Method:
- Bring to the boil in saucepan
- Add botanicals like star anise, cinnamon sticks, cloves, peppercorns, coriander seeds.
- Add herbs like bay leaf, garlic, chilli, rosemary, ginger, turmeric, lemongrass and more
- Slice red onion, capsicum, carrots, fennel, cauliflower florets, zucchini or daikon.
Uses:
- as a dipping sauce or brush over grilled meats drizzle over grilled or fried king prawns or fish fillets
- salad dressing or noodle salad
- marinade for chicken
